We just returned home from a short (but wonderful) visit back to our old home town in Minnesota, so we’re going to keep this one brief. Along with our Gruyère Stuffed French Toast the other day, we made another recipe from Washington. This one comes from the Washington State Potato Commission and is a twist on the typical hash brown side dish. You guessed it – Apple Hash.
We started by heating onions, salt, pepper and olive oil over medium heat. After a few minutes we added some chopped Yukon gold potatoes.
We cooked the potatoes for about 10 minutes and then tossed in some apples, butter and fresh thyme.
After another 15 minutes, the apple hash was ready to serve.
As you know, we ate it alongside our fancy stuffed French toast, but it didn’t quite measure up to that stuffed goodness.
It earned a solid 2 spoons from all of us. It’s not that it didn’t taste good, we were just hoping for something a little less ordinary. I think it could easily be better with a bit more seasoning – more salt, some rosemary and perhaps coriander.
So it’s not that we don’t recommend this recipe. It has definite potential and we may even give it another go, but next time we’ll put a bit of our own spin on it. Now, off to unpack and get ready for the week ahead including another recipe from Wales for ya!

Thanks! It’s Chicago Cutlery. While they do look pretty, I wouldn’t recommend it though. It’s our second set and they just don’t stay sharp. My mom had some that lasted forever, that’s why I wanted them. We haven’t had much luck though. Honestly my free-bee, cheap knife that came with our pots and pans works better. One of these days I’ll invest in good quality knives.

Ah! I was wondering what that delicious looking side was… I don’t think I’ve ever had apple hash before; what a nice idea to accompany just about any dish. Thyme is a perfect accompaniment. “Apples, butter, fresh thyme” mmm….. Hope your trip was great Kristy and that everyone is recovering from the travels 🙂

Like I always say Kristy, make the recipe your own with what you have. You might come up with some wonderful renditions of this Apple Hash. I’ve never tried apple hash but I know regular hash is wonderful. Now I am going to walk around my chair and do the Miss A diet now 🙂

The flavors really go well together. My mom actually enjoyed the hash as-is. I still need to add some more seasonings though.

What a great combo. I’ve never tried this kind of hash before…we usually make hash with leftover beef and potatoes. So obnoxiously filling, but delicious! This seems a bit lighter because of the apples, but still flavorful and tasty. Hope you all had a nice trip to Minnesota!

Apples and potatoes is definitely an interesting twist!! But I can imagine with some intense seasoning, this would be a great little side dish! Possibly topped with a fried or poached egg….tho I can’t say I’ve ever had apples with eggs before!! BTW, I always love your cute titles to your posts!!!

Thanks Linda! Sometimes I sit for at least 10 minutes thinking of titles. I actually don’t even start writing until I have a title…I do the same thing in my work. I guess it’s just part of my writing process. Now a poached egg…that’s another great idea! I never would have thought of that one. Now I’ve got to learn how to poach an egg. 😉

I vaguely remember having something like this before, although maybe I’m imagining it 😀 Don’t you hate it though, when you make something and the taste is… perfectly fine, but just seems so uninspired and plain, compared to the amount of time you invested in it. Well, they say you eat with your eyes anyway, and it sure looks great, even if it did only win 2 spoons!

LOL! I have that feeling all the time – is it real? Or am I making that up? I wonder how “real” my perspective is at times. 😉 And yes, it’s so disappointing when something you have high hopes for turns out just ho hum. I mean this has all the makings of something really tasty – it just needed that extra something. I’m not giving up though because it does have some real potential.

THe combination of apples and potatoes sounds diffeerent but I’m sure it tastes good. I think I would have just eaten them without the potatoes. I love apples, love to eat them raw, baked, sauteed, and even mashed like apple sauce, Mmmmm!
