Sweet, Sweet Memories

As promised, tonight we’re concluding our Maine recipes (We won’t make you wait anymore Caroline! 🙂 ), and what would a trip to Maine be without the traditional Maine Blueberry Pie. We couldn’t think of a more fitting end to both our trip and our Maine posts.

So without further adieu…We began by making a butter crust. I love to make pie crusts. I have several favorite recipes – the all-shortening crust for my Grandma’s blackberry cobbler and a shortening and butter crust for apple pies; but when it comes to blueberry pie, I like a good, all butter crust.

We started by sifting together the flour and salt and then we cut in the cold butter. I didn’t have my trusty pastry blender on hand at the cabin, so I used two knives to create coarse crumbs.

We then added the cold water to the flour and formed our dough, which we divided into two portions. The dough then chilled in the fridge for an hour.

While the dough refrigerated we prepared the blueberries by adding a bit of sugar, flour and lemon juice. Again we’re keeping it simple.

We set the blueberries aside and pulled the dough from the fridge. We rolled out the larger of the two portions for the bottom crust. We didn’t have a rolling-pin at the cabin, so we used an empty wine bottle with plastic wrap. (A little tip I remember reading over at Sally’s Bewitching Kitchen at some point in time.)

We then placed the rolled out dough into a pie dish and added the blueberry filling.

We topped the blueberries with a bit of butter, rolled out and placed the top crust over the dish.

We cinched the crusts together, brushed an egg wash over the crust and added a few holes for venting. We then popped the crust into a 400F oven for 40 minutes.

We couldn’t wait to dig into this golden brown beauty.

And we didn’t. Well, we waited long enough to let it stop bubbling, but then we got right to it.

It doesn’t get much better than this…until that is, you add vanilla ice cream! Yum!

As you can imagine this juicy, blueberry deliciousness easily got 4 spoons all around. It was the perfect way to end our trip to Maine. As was this beautiful sunset on our last night at the cabin.

    You pie looks amazing. I have never, ever seen so many blueberries. Around here, in L.A., one little carton is about $5.00. I could never even dream of having that many blueberries. Your crust is gorgeous as well. You have a lucky, lucky family.

    I just knew that your last post about Maine had to be blueberry pie. When it comes to food in Maine, that is what everyone wants. A great looking pie. It is hard to tell but your berries look like the tiny wild ones.

      I’m not sure if they’re the tiny wild blueberries or not. We bought them at the grocery store in Maine. I had never had the tiny blueberries before our trip. They are just so darn good!

      Thanks! The sunsets were beautiful. Our first trip to Maine we spent our time further south along the coast and had amazing sun rises. We were very surprised that going Northeast would make for such great sunsets.

    Clever idea about the ‘rolling pin’ — we might have an empty bottle or two laying around! A true sign of fall…blueberry pie. This pie looks mouth watering.

    There’s nothing I don’t love about this post. One, you had to drink a bottle of wine at some point just to make the crust. Two, Maine blueberries! Three, dotted with butter. Four, Ice cream. Five, all butter crust. Six, even the sky is blueberry. Seven, you don’t cut small pieces. Eight, I forget what eight is for. Nine, is for everything!

      Can you believe this is my first time eating and making blueberry pie! I’m usually partial to blackberry and raspberry, but since we were in Maine…I’m so glad we made this though. It was heavenly.

    I love the butter over the blueberries! I’ve never seen that before in pie – how great. Your golden crust is just so appetizing… (and what a pretty napkin surrounding the pie). I definitely enjoy a little vanilla ice cream with warm pie or a dollop of whipped cream – either one adds to the deliciousness factor. Beautiful recipe Kristy – so glad you had such a great time in Maine and clearly made the best of it!

      They did have some cute little towels and napkins at the cabin. It was fun for taking pictures. 🙂 We definitely had a great time in Maine and had to make the most of it. The memories have to last a while. 🙂 LOL!

    What a great looking pie! And to think, I’ve got plenty of blueberries in my freezer with nothing to do. (I kinda overdid it at the farmers markets this year.) And yes, this pie must be served with vanilla ice cream. I’m sure it’s a law or commandment or something.

    Blueberries, blueberries – you’re so lucky! 😦 I said it in a previous comment, but I can’t imagine what it must be like to bite into a big pie filled with luscious blueberries… damn! So tasty looking! I bet the lemon juice really gave a lovely bit of zing too… I’d be tempted to add in some grated zest as well! Also – lol, I can’t believe you still don’t have a rolling pin! 😀 You seem to be rolling stuff out all the time, I’d have thought it would have been top on your list of things to buy! I’m wondering, why does one need to roll it in plastic wrap? Could you not soak the bottle in hot soapy water for an hour or so to remove any labels and then just set it aside as a “permanent” rolling bottle?

      I think they used the wine bottle because they weren’t at home (there was no rolling pin at the rental place) – the plastic may prevent the crust from sticking to the glass.

        Ah yes, of course – I forgot of course that they weren’t at their home, but at the holiday place… now I think of it I’m sure there have been pictures posted before involving a rolling pin.

          Yep – we were at the cabin in Maine. I was shocked there was no rolling pin actually! That’s why the bottle was wrapped in plastic too – no time to wash it. I was already in the midst of the recipe and needed to roll when I realized there was no rolling pin. Speaking of rolling pins – I just saw my Great Grandma’s rolling pin at my mom’s house. Now that is a rolling pin! This thing weighs as much as a brick! I love that thing!

      Lemon zest would definitely be good here too! I may have done that…not sure. It’s been too long since I made this pie. Perhaps I’ll have to make it again and refresh my own memory. LOL!

      Thanks Mandy! It was by far the best sunset – so fitting that it was our last while we were there. And even Mr. N was awake to see this one (he and Miss A were asleep for all of the others). 🙂

    Did someone say butter. I feel like Julia Child’s and Paula Deen right now because I’m closing my eyes and dreaming of butter crust lol. And this pie reminds me of what we call deep dish pie where they make it in a cast iron deep pan. I think you might love it that way too. Of course I have to show this to my mom and she will flip, she loves pie. And that good ol’ vanilla ice cream.. yup I;m in heaven right now 🙂

    This pie was WAY worth the wait…thanks for the shout out Kristy! 🙂 It looks divine and I can understand why it got four spoons all around. Blueberry is definitely my favorite type of pie. Speaking of which, I have a nice little pie cutter that I need to put to use. Can’t wait to see which destination Miss A chose for Sunday. 🙂
