A Winning Pick

Thanks to everyone who voted for us on Babble and for all the wonderful location suggestions. This morning Miss A did the honors of picking our winner. Mr. N offered his assistance, but she was adamant that he stay far back because she was doing this one!

After giving the bowl a good shake, she drew our winner.

Miss A did let Mr. N read the name and destination since she can’t read. 😉

Congratulations A_Boleyn! We’re looking forward to making some recipes from Japan – especially sushi.

Thanks again to everyone, and for those of you that voted for Italy – no worries. We’ll be going there soon. I can’t hold out much longer. When we started this adventure I said I wouldn’t pick Italy right away because that’s what most of our dinners used to revolve around; but I think I’ve waited long enough.

Until then, here’s a quick little recipe for Caprese Bites that Mr. N helped me out with the other day. The recipe is adapted from the Taste of Home Comfort Food Diet Cookbook. We started by slicing the tops off of some cherry tomatoes and carefully scooping out the insides.

We then turned them upside down to drain while we placed whipping cream, fresh mozzarella, basil leaves and garlic in a blender.

Next we added the stuffing to a resealable bag, snipped off a corner and used it to fill the cherry tomatoes.

Lastly, we drizzled the tomatoes with olive oil and of course balsamic vinegar.

Dad and I both enjoyed these as a side dish to our meal. We both agreed that they were better with the balsamic than the olive oil. Miss A ate these up, but that was a given. Mr. N wasn’t a big fan, but he’s picky when it comes to tomatoes. All in all, not a bad little side dish – and they’re just so darn cute. I’m sure I could come up with a more delicious (read: unhealthy) way to make these, but for a diet snack, these are pretty tasty.

    Awww man I’m so late with the contest, real life definitely kicked my butt this weekend, but I’m happy the contest was successful. And I can’t wait to read some Japanese recipes. And did I say these Caprese Bites look absolutely wonderful? Well they do even though I can’t eat them but I think I could try this recipe and twist it a little.

    Lovely recipe – I’m not sure if I’d have the patience to hollow out a whole load of cherry tomatoes – they’d probably find their way into my mouth way before I’d finished, although if I was cooking a special meal for someone I could be persuaded to behave!

    Congratulations to A_Boleyn! If I had to make some suggestions for the Japanese food, I’d definitely recommend the following:
    – Sukiyaki
    – Okonomiyaki (I posted a recipe for my version of this in April I think – it’s really good with shrimps)
    – Tempura
    – Some form of Udon noodle soup!

        I’m making some miso soup tomorrow with baby bok choy as the thing that sinks. I haven’t decided whether to add beaten egg to the soup and make it an egg flower soup or crab chunks. Definitely will sprinkle crunchy chow mein noodles over the top though … chinese/japanese fushion. 🙂

    I have a similar recipe for an appetizer, except you use strawberries, whipped cream and basil, then drizzle with balsamic. Yum!! I love that the kids are getting to help choose your next culinary adventure, too.
