It’s time for the birthday girl’s dessert and you’ll never guess what we found. Remember that Miss A requested (well, okay rather demanded) cookies for her birthday? Well when I pressed her on what kind of cookies she wanted she said, “balsamic cookies.” Mr. N thought she was out of her mind and was horrified at the thought, but Miss A kept insisting on balsamic cookies. So I did a search, and do you know what I found? Not just balsamic cookies, but Chocolate Balsamic Cookies! I thought Miss A was going to fall off her chair she was so excited – chocolate and balsamic and a cookie!
She most definitely was on hand to help (and sample) this recipe! First we sifted together the flour, salt and baking soda.
Next we mixed the cocoa and the sugars.
Miss A whisked our egg – and rather adeptly. I was impressed. I guess she is three now!
And of course she also had to add the balsamic.
Everything is then all mixed in the same bowl – the flour mixture, cocoa mixture, balsamic, yogurt, egg, vanilla and melted butter.
We then beat it together to form a creamy batter.
And finally we scooped little spoonfuls on the baking sheet.
Bake the cookies for 7-11 minutes – depending on how you like your cookies done. We prefer ours a bit gooey, so we baked for 7 minutes on convect bake. And how did Miss A like them?
Actually this is “Dora” with her “rescue pack” and these cookies passed her taste test!
Mr. N also tried one and was so surprised. He didn’t think these would be good at all, but when I asked him what he thought he said, “4 plus 4 plus 2 spoons!”
Dad also enjoyed them. He describes them as a chocolate lover’s chocolate. I of course took a pass…I just can’t do chocolate. Miss A doesn’t mind though – it just leaves more for her.
