Salsa – Almost as Much Fun to Say as Sriracha

There’s a story behind this – every time we go to the grocery store and get to the Asian food aisle, Miss A starts yelling “Sri-chacha” – and I mean yelling. We can’t help but laugh every time, even while trying to shoosh her just a bit. Then she continues for the next few aisles whispering “Sri-chacha.”

While we didn’t use Sriracha tonight, it was Miss A’s pick for our stateside adventure. We asked her what state she wanted to cook from and without hesitation she said very matter of factly, “California.” Dad and I both turned and looked at each other in shock. You see she usually picks places we’ve recently talked about or visited, or even one she flips to in the atlas, but today was straight out of her own little mind. So even though we already visited California once before, we figured we’d give it another go because Miss A said so.

Every time we visit California we eat lots of fresh Mexican food – especially fresh salsa. And since we’re really full from eating desserts the past few weeks and weekends, we’re going to feature a healthy California side dish this week in its place – Pineapple Jicama Salsa. (Don’t worry…we’ll have another dessert soon. 😉 )

This recipe is courtesy of our good friend, Linda, who shared this wonderful dish with us last week after I devoured quite a bit at their house. We started by dicing some tomatoes, jicama and pineapple.

Next we chopped up the green onions and cilantro.

After adding a little garlic and sea salt it was time for the kids to do their juicing. I don’t even have to ask them twice.

Miss A came running first and did a nice job getting it started. Mr. N then got his turn too.

This juicer is by far his favorite tool for cooking. Great exercise for him too! While Mr. N worked on juicing, Miss A did a little juicing of her own.

Then they were both ready to add the honey.

We used a raw honey we picked up at a local farm.

After the kids finished licking their fingers and the measuring cups they helped to mix it all together.

After chilling the salsa all day, we served our salsa with some corn chips at dinner.

The kids aren’t big fans of salsa, but gave this one 2 spoons. Miss A liked the pineapples and Mr. N thought it was ok, but prefers his chips plain. Dad and I both gave the salsa 3 spoons.

It’s a fresh and flavorful salsa. I’m not usually a big fan of pineapple, but combined with the cilantro it was delicious. I think next time I’m going to try adding a jalapeno as well, just to kick things up a bit. I’m also thinking that this would go well with some chicken or white fish. So many options…

      Wonderful and so easy. I’m not sure I’ll ever buy a salsa again. There’s just too many fun and fresh variations to make at home. 🙂 This one would go well over fish too. 😉

    Speaking of spicy… Today I had several glowingly-ripe hot peppers in the backyard and some pineapple and jicama in the refrigerator. Guess what’s for dinner?

      I’m so glad you liked it!!! I’m definitely adding peppers next time. Especially now that I know the kids don’t really eat it, I won’t have to worry about making it too spicy. 🙂

    That sounds like some amazing salsa! I eat WAY too much Mexican food (living in California)–it’s by far my favorite cuisine. Carne asada, carnitas, salsa, guacamole, you name it, I’ll eat it. OK, now I’m craving Mexican food for lunch, and it’s only 10 a.m. Yeesh, thanks a lot. 😉

      Totally. She just looked so laid back in that cart. Gotta love those moments. Thank goodness for cellphone cameras! Thanks for the vote on babble. I appreciate it. 🙂 I used pineapple in another salsa before, but it was one I served at a party, so I didn’t get that much of it (and don’t remember it). In this recipe the pineapple is really the star. I’m not normally a big pineapple eater. I don’t dislike, I just don’t usually choose it. But with the cilantro it’s really amazing.

    I just have to say that Miss A is so darn cute in that picture of her in the grocery cart! I remember those days, wait I’m still going through that with my 20 month old! They scream a word out, but you want to laugh but at the same time you don’t want to encourage them to continue. My guy screams out dogs, he sees a picture of a dog and he goes crazy, he loves dogs!

    I have never tried jimica before, mainly because I never know what to do with it. Looks like it would be perfect in a salsa, I love salsa and chips! Great chip basket, so festive!

      LOL! Grocery trips are always an adventure. You never know what’s going to happen. Miss A used to scream out at the dogs too. And cats. And birds. And any kind of animal she would see. Now it’s just Sriracha and nail polish. LOL. The jicama is great in this salsa. I’ve also had it served on a veggie platter with a ranch dip. It was pretty good that way too. 🙂

      They are becoming quite the little foodies too. I actually heard them ask dad if they could help make their lunches today. 😉 It’s definitely one that satisfies all of the taste buds – sweet, salty, crunch and soft. Yum!

    What a great post! Sri-chacha!! This salsa looks so refreshing and delicious. The green onion and cilantro are great and I especially like the unpasteurized honey. Can Miss A explain to me how she gets that gorgeous, seemingly effortless, tousled look?

      LOL! Her tousled look comes from running around the house, crawling and rolling all over the floor (or grass) and completely avoiding me and the hairbrush at all costs. 😉 I’m totally a convert to the raw honey. It’s so much more flavorful!

    That’s a great chips basket you have there! Where can I get one? I’ve never heard of “jicama” although looking it up, Wiki says it’s also called a “yam” – is this correct? Looks delicious in any case – love the idea of the pineapple. Bet it added a lovely bit of tang!

      Thanks Charles! You can get a basket like this at my mom’s. LOL. I was at her house for dinner last night and borrowed her serving basket. Cute isn’t it?! She’s always got cute little plates and things. I don’t know if a jicama is a yam. It is a sweet, root vegetable. The first time I had it was on a veggie platter with a ranch dip. It’s definitely very sweet. Mr. N describes it like an apple with a lot less juice. He’s about right.

    Let me just say, Mr. N and Miss A are mini-me’s of you and your husband. And I love how you stated Miss A was “rollin'”, so cute lol. I never used jicama, but I love pineapples so I might put my own spin on this without the tomatoes.
