What’s Not to Love About Colorado

Tonight we round out last night’s winning Colorado dinner with Balsamic Glazed Fingerlings, again adapted from Agriculture Colorado. I still can’t get over how successful dinner was – and even more surprising, how much the kids enjoyed it! Miss A asked for more steak on two different occasions today and was very distressed that we didn’t have any leftovers. Mr. N finished off the fingerlings tonight and has already asked that we make the potatoes again soon. He also wants to pass the recipe on to his Grandma to make on one of the night’s he goes to her house for dinner. Looks like this meal will become one of our family recipes!

We don’t say this often, but this is one recipe you’ve got to try. We’re sure you’ll love it – if not, send us the leftovers! 🙂 You start with dark balsamic vinegar, white oregano infused balsamic vinegar and honey. Bring it to a simmer on the stove and reduce the mixture until it’s syrupy, about 40 minutes.

While the glaze is simmering, boil a large pot of water. Wash the fingerling potatoes and add them to the pot when the water reaches the boiling point. Cook for about 15 minutes, or until fork tender.

Once the potatoes are tender, remove and drain. Let them cool for about 10-15 minutes and then slice them in half lengthwise.

Now they’re ready to roast. Add some olive oil to a skillet and slowly add the potatoes, roasting over medium-high heat. Next add some rosemary and sea salt.

And the zest of one orange.

When the fingerlings are golden brown and slightly crispy around the edges remove from the heat.

Then it’s time to add the balsamic glaze.

Mr. N was already excited about the potatoes and waiting to do his part to get this meal on the table.

Mix together and toss with fresh parsley and serve.

Voila! And you know the rest of the story…4 spoons all around. Well, except for Miss A who spit hers into a napkin. At least it wasn’t on the floor this time!

    I love steak and potatoes once in awhile! My boys would ask for seconds too. The balsamic, oregano, and honey combination sounds like it’s a winner, I’m going to try this recipe. I can drink balsamic vinegar by itself, I love adding it to my chicken salads. Okay, now I’m hungry!

      I’m with you – I’ll enjoy steak once in a while. These potatoes on the other hand…I could eat them daily. I think balsamic has to be one of my favorite ingredients of all time! 🙂

    Those fingerling potatoes have so much color… beautiful! I saw some at the Farmer’s Market the other day that looked just like that. BTW, I have my own little Miss A (in our house it’s my stepdaughter, Miss J)… she’s the pickiest eater I’ve ever met! She’s one of the reasons I’ve gathered so many recipes over the years… when I find something she enjoys, it’s like hitting the lottery. 😉

    I can’t wait to try this!!! I love, LOVE, anything with balsamic! You have such a beautiful family!! Love your ‘about me’ . Miss A and Mr. N… so cute!! : ) I will have to try this on my Mr. M…. he doesn’t venture far from the usual chicken nuggets, meatballs, green beans, etc. but I could see him giving this one a go.

      They were heavenly! Mr. N doesn’t usually eat potatoes – unless they are French fried. 😉 So the fact that he ate them and the leftovers was a rining endorsement to me. 🙂

      You know we just had these little potatoes for the first time a few weeks ago – and yep, a few of them are purple. We were so surprised to see that they were purple on the inside too. I’m actually shocked Mr. N tried them after his experience with beets. LOL!
